In all the ayurvedic texts, milk has been extolled for its virtues. However, many modern researches on milk and dairy products (conducted mostly in western countries) have found it to be associated with many diseases, including but not limited to diabetes, heart disease and mental disorders like autism. This is because their research is based on the milk from breeds like Jersey, Friesian, Ayrshire and Holstein. The milk of the ‘desi’ or Indian (and African) breeds of cow is substantially different from the milk its European and American counterparts. The biggest difference is in the composition of the milk protein casein itself. The milk from the indigenous cows is known as A2 milk based on the type of protein it contains, whereas the one from other types of cows is classified as A1 milk.
